Can I put 215/60R16 tyres on my Vibe?

Welcome to Genvibe.Those tires are much larger in diameter and are not recommended. Your speedometer will also be way off.

They are 1.7% different which is alright. The 215/60 were 4.9%. 3% is the recommended limit. Check here.

go with 225/50 16s and u will see no difference except the tread wraps around the sidewall a bit, but thats a good thing

I had 215/60/15 tires on my Vibe earlier this year. There was no rubbing and the speedo was dead on. There were no drivability problem what-so-ever. My speedo was off by 2-3mph with my stock 205/55/16 tires. The 3% rule is a general guideline, not set in stone, and is not the same for every car, wheel or tire. You will be fine with 215/60/16 tires.
