Let's say a 12V automotive bulb where you cut the connector and just crimp the wires altogether. 2+ to the 1+ and 2- to the 1- on the car side. Would they work fine?

Wiring them in parallel should work fine. As you said, + to +, - to -, to any 12V source should be OK. Try to solder them if possible, stronger than crimping them.
