Is the exedy kty14 the correct clutch for the gt? There seems to be contradicting information on the interweb.
Resurface the flywheel or get a new one? Any suggestions on a new flywheel?

You can use flywheel shims to make up for that but you've got to think, why does a flywheel need to be resurfaced? Generally it's because it's either warped or misshapen. As you cut material off, you make it thinner. The thinner it is the quicker it heats up and the quicker it will warp or misshape.
