Some folks swtich to snow tires and load stuff to throw under tires (gravel, salt, etc), a shovel, blanket, etc. Winters are fairly mild here, so I don't usually put in snow emergency supplies unless there's a snow forecast.Good to check the tire tread, coolant level.I leave my roof rack cross rails...

As insane as your dream sounds, I can see where it would be kind of fun. What I would do is instead of spending the time to build a roll cage and then be inside it when it wrecks, I'd make it a remote control car. That way you could watch it wreck from a safe distance.

You've had some tough luck trying to get a Vibe, but I know of two things that you should be grateful for. First, you already have your own car that works fine and meets your needs.
